🥩🌶️ Steak au Poivre with Cognac Cream Sauce 🌶️🥩


Juicy steak coated in cracked peppercorns, served with a rich, creamy cognac sauce for a gourmet meal at home!


Ingredients:

Steak:


4 beef tenderloin steaks (6-8 oz each)

2 tbsp black peppercorns, coarsely cracked

1 tsp salt

2 tbsp olive oil

2 tbsp butter

Cognac Cream Sauce:


1 tbsp butter

2 tbsp shallots, minced

¼ cup cognac

1 cup heavy cream

2 tbsp Dijon mustard

½ tsp salt

¼ tsp black pepper

Directions:

Prepare the Steaks:


Press cracked peppercorns evenly onto both sides of the steaks.

Season with salt.

Cook the Steaks:


Heat 2 tbsp olive oil and 2 tbsp butter in a skillet over medium-high heat.

Add steaks and sear for 4-5 minutes per side for medium-rare, adjusting time for preferred doneness.

Transfer steaks to a plate and tent with foil.

Make the Sauce:


In the same skillet, add 1 tbsp butter and minced shallots.

Sauté for 1-2 minutes until softened.

Carefully add ¼ cup cognac, stirring to deglaze the pan, and simmer until reduced by half.

Stir in 1 cup heavy cream, 2 tbsp Dijon mustard, ½ tsp salt, and ¼ tsp black pepper.

Simmer until the sauce thickens slightly.

Serve:


Pour the cognac cream sauce over the steaks and serve immediately.
