🥔 Roasted Fingerling Potatoes 🥔
Crispy, golden fingerling potatoes with a savory garlic and herb flavor. Perfect side dish for any meal!
Ingredients:
2 pounds fingerling potatoes, cleaned and cut in half lengthwise (approx. 900g)
3 tablespoons unsalted butter, melted (42g)
2 tablespoons olive oil (30ml)
3 cloves garlic, minced
1 teaspoon dried Italian seasoning (2.6g)
1 teaspoon kosher salt (6g)
1/2 teaspoon black pepper (1.2g)
2 tablespoons chopped fresh parsley, for garnish
Directions:
Preheat Oven:
Preheat your oven to 425°F (220°C).
Place a large dark baking sheet in the oven to heat up.
Prepare Potatoes:
In a large bowl, toss the halved fingerling potatoes with melted butter, olive oil, minced garlic, Italian seasoning, salt, and pepper until evenly coated.
Arrange on Baking Sheet:
Carefully remove the hot baking sheet from the oven.
Spread the seasoned potatoes on the baking sheet in a single layer, cut side down.
Roast Potatoes:
Roast the potatoes for 25-30 minutes, flipping them halfway through, until golden brown and crispy on the outside and tender on the inside.
Optional Broil:
For extra crispiness, broil the potatoes for 1-2 minutes. Keep a close eye on them to avoid burning.
Serve:
Remove from the oven and transfer to a serving dish.
Garnish with chopped fresh parsley and serve hot.
