Ingredients:


For the Cookies:


½ cup unsalted butter, softened (113g)

½ cup powdered sugar (60g)

½ teaspoon vanilla extract

Pinch of salt

1 cup all-purpose flour (120g)

2 tablespoons cocoa powder (14g)

Red gel food coloring

For the Filling:


¼ cup unsalted butter, softened (57g)

¼ cup shortening (57g)

½ teaspoon vanilla extract

1¾ cups powdered sugar (210g)

Directions:


Make the Dough: Beat butter and powdered sugar until creamy. Add vanilla and salt, then beat again. Stir together flour and cocoa powder, and slowly add to the butter mixture. Beat in red gel food coloring until desired shade.

Chill the Dough: Divide dough in half, roll each into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.

Prepare for Baking: Preheat oven to 350°F (175°C). Place one dough ball between wax paper sheets and roll out to ¼ inch thick. Use a 1½ inch round cookie cutter to cut out 15 circles. Re-roll dough scraps as needed.

Bake the Cookies: Place cookie circles on a nonstick baking sheet. Use a cookie stamp to press images onto tops if desired. Bake for 12 minutes. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Make the Filling: Beat butter, shortening, and vanilla until creamy. Slowly add powdered sugar until fully mixed. Spoon frosting into a piping bag fitted with icing tip #10.

Assemble the Cookies: Squeeze frosting onto half of the cookies, top with remaining cookies, and press slightly to spread filling.
