Ingredients:

6 cups grated carrots (about 600g)
1 cup brown sugar (200g)
1 cup raisins (150g)
4 eggs
1 1/2 cups white sugar (300g)
1 cup vegetable oil (240ml)
2 teaspoons vanilla extract (10ml)
1 cup crushed pineapple, drained (225g)
3 cups all-purpose flour (360g)
1 1/2 teaspoons baking soda (7.5g)
1 teaspoon salt (5g)
4 teaspoons ground cinnamon (10g)
1 cup chopped walnuts (120g)
Directions:

Prepare Carrot Mixture:

In a medium bowl, combine grated carrots and brown sugar. Set aside for 60 minutes, then stir in raisins.
Preheat Oven:

Preheat oven to 350°F (175°C). Grease and flour two 10-inch cake pans.
Mix Wet Ingredients:

In a large bowl, beat eggs until light.
Gradually beat in white sugar, oil, and vanilla.
Stir in crushed pineapple.
Combine Dry Ingredients:

In a separate bowl, combine flour, baking soda, salt, and cinnamon.
Stir into the wet mixture until absorbed.
